How to Make Traditional English Mince Pies
It’s Christmas !! (Almost). That means that Mouse is in baking mode to make snacks and treats for this seasons holiday.
In this episode, Mouse shares her mum’s family Mince Pie recipe.
Ingredients
1 7/8 Cups of Flour
3oz Butter - cold and diced
3oz Vegetable Shortning - cold and diced
2 large eggs (beaten)
1 additional large egg (beaten)
Jar of sweet mincemeat
Brandy [optional]
Baking Process
[Optional] Add 3 tablespoons of Brandy to the sweet mincement and mix thorougly.
Preheat the oven to 400F
Add the flour, butter, shortning and 2 Large eggs to a mixing bowl
Mix by hand in the bowl, ensuring you break all lumps to get a consistent crumbly dough.
Mix on a low speed
Once it is a solid pastry, remove and place on a floured surface.
Using a rolling pin, roll out the dough to be approximately 3mm thick
Using a round pastry cutter, cut out enough pastry dough circles for your baking tray
Place the dough circles in the tray
Add two tablespoons of the sweet mincemeat to each of the mini pies
With the remaining pastry dough, cut out the pie-lids using a slightly smaller pastry cutter.
Add the pastry lids to each pie
Using the remaining beaten egg, brush the top of the pies
Place in the oven for 20 minutes.
When baked, remove and let cool.
